Recipes

Hey everyone I am going to try to write everyday so I am starting today This is out of a book called The Eat Clean Diet For Family and Kid Back in the back there is recipes.

Recipes

1. Birthday Cupcakes And A Baking Lesson Too

Makes  12 cupcakes-Prep time 10min.-Cook time 15-20 min.

Ingredients for cake

1/2 cup/120 ml egg whites or 5 large egg whites*

2 1/4 tsp/ 11.25 ml lemon juice or white vinegar**

1/4 tsp / 1.25 ml  sea salt

1/2 cup/ 120 ml unbleached all purpose flour or gluten free flour

1/4 cup/ 60 ml agave nectar***

1 tsp/ 5 ml best quality vanilla

1/4 cup / 60 ml cooked, pur’eed sweet carrots

1 tsp / 5 ml finely grated lemon rind

1 1/2 tsp/ 7.5 ml baking powder

Ingredients for frosting

2 cups / 480 ml yogurt cheese (if you are getting the book or have the book it says recipe page 225)

1/2 tsp / 2.5 ml vanilla

1/2 to 1 cup/ 120- 240 ml sifted confectioners sugar

Preparation for cake

1.Preheat oven to 350F/ 171C. Line a muffin tin with Slipat reusable muffin liners or unbleached paper liners. In large bowl combine egg whites, lemon juice or vinegar, and sea salt.

2.Beat whites at  at high speed until stiff peaks form. This will take a few minutes about 4 or 5 so be patient. when you are finished you should have doubled the volume.

3.Fold the egg whites and the rest of the ingredients together so everything is just combined. Don’t over mix or you will lose the volume in your egg whites. Fill muffin cups with batter

4.Bake in preheated oven for about 20 minutes. Check about 15 minutes into baking to check their progress.  The muffins should be golden brown, not dark you can do the bounce test, too. Place your finger gently on top of one muffin and press down. If the muffin springs back, it’s done. Remove from heat and let cool on wire rack.

Method for frosting

1.Mix all ingredients together untill smooth and creamy. Frost cupcakes and refrigerate.

I never tried this yet but it sounds good.

Breakfast Hermits

Eating a cookie is just plain fun. Eating a cookie for breakfast feels a bit naughty but it sure helps nutrients go down. This cleaned up version of hermit cookies chases fat and sugar with a helping of delicious dried nuts

 

Yield 5 dozen cookies-Prep time 20 min-Chill time 2hrs-Cooking time 10mins

2 1/2 cups/ 600 ml whole wheat flour

1/2 cup/ 120 ml protein powder

2 tsp/ 10 ml baking powder (look for a brand that contains no alum)

1/4 tsp/ 1.25 ml  ground clove

1/4 tsp/ 1.25 ml ground cinnamon

1/2 tsp/ 2.5 ml ground nutmeg

1/8 tsp/ 0.6 ml ground mace

1/8 tsp/ 0.6 ml ground cardamom

1/4 tsp/ 1.25 ml sea salt

1/2 tsp/ 120 ml agave nectar

1/2 cup/ 120 ml best quality olive oil

4 egg whites

1/2 cup/ 120 ml unsulfured blackstrap molasses

1/2 cup/ 120 ml apple butter or applesauce

1 Tbsp/ 15 ml best quality vanilla

2 Tbsp/ 30 ml plain low fat yogurt

1 cup / 240 ml unsalted, raw, slivered almonds

1/2 cup / 120 ml dried unsweetened cranberries

Preparation

1.Preheat oven to 350F / 171C. Prepare cookie sheets by lining with Slipat or parchment paper.

2.Sift all dry ingredients and spices together in a large mixing bowl. Cream olive oil and agave nectar together untill smooth.

3.In separate bowl beat eggs together and the add to olive oil mixture. Mix well. Add molasses, applesauce, vanilla and yogurt and mix well again.

4.Add raisins, cranberries and almonds. Mix well. You may have to use your own clean hands coated lightly with olive oil to mix this properly. The dough should form a ball.

5.Wrap with plastic and refrigerate for an hour or two. Remove from refrigerator.

6.Using a soup spoon, make small balls with the batter. Place on cookie sheet and press down lightly with fork. Bake for 10 minutes or until lightly browned.

I have not tryed this but will soon.

4th Of July

Today is the 4th of July and we are going to a cookout\grilling with the pastor and his family. I hope there is fireworks I think we may have some sparklers. I wonder what foods there will me there probably  hotdogs. Comment guesses and I will answer to night or tomorrow.

Kitten Stories

Yesterday we got 2 kittens. They are about 11-12months old. Mine is a Calico named Tessa she is gorgeous  I am going to tell you what colors she is: Mostly gray, yellow, a little white. My sister Rylee’s cat is named Boo it is orange and white. Tessa loves to play and Boo is not as hyper as Tessa she was eating the couch and Josh (My stepdad) picked her up and yelled at her. My mom said “do you really think the cat will listen to you” or something like that. Since we have only had them for 2 days going on 3 not many stories. But I just got an idea I will call this kitten stories and post new adventures whenever they come.

Are Family Garden

We have a family garden with Basil Lime, White Horehound, Lavender, Steria, Nicandra/ Shoofly Splash of Cream, Wild Taatar Oregano, Blessed/Holy Thistle, and Tomatos. This is an inside garden in flower pots.

About Horses and Ponies

This is some stuff about horses and ponies. I am going to do two Topics each day about horses. I am also going to write two Common Ailments each day. My topic Common Ailments will be used every day until I am done with all of the Common Ailments.

These are the main saddles English and Western, now I bet your thinking they look the same but have different names. Well that’s not true Western saddles have a horn and you do not run up the stirrups after done riding .  With an English saddle the stirrups should always be run up when your not riding; the English saddle does not have a horn and English saddles are usually used for jumping.

Here are Common Ailments

Colic

Colic is another word for abdominal pain or stomach ache. Horses cannot be sick, so colic is always serious. Call your vet as soon as you suspect that something is wrong. Some cases my need surgery.

Signs of Colic

Sweating, rolling, and kicking at the belly are all signs of colic.

Bad Cut

Any cut that is longer then 1 in. (2.5 cm.) or gapes open may need stitching. Puncture wounds and those near joints may also need veterinary attention. Be safe, not sorry!

>Strawberry Jam Recipe

>Here is the recipe for strawberry jam. I suppose I should put the book title on here. The books title is: My First Little House Books My Little House Cook Book, Adapted from The Little House Books. By Laura Ingalls Wilder, Recipes By Amy Cotler and Illustrated by Holly Jones. Here is the recipe. This is a library book.

Strawberry Jam (about one cup)        

 Tools                                                                 
measuring cup
measuring spoons
dinner knife or huller
potato masher or food processor
small saucepan
tablespoon
small bowl
fork or small whisk
wooden spoon
1-cup container with lid

Ingredients
1 pint fresh strawberries
1/2 cup sugar
1 tablespoon cornstarch
1/2-1 teaspoon fresh lemon juice

1. Remove tops from strawberries and cut them in half, and place them in the saucepan. If berries are very ripe, mash with potato masher or food processor until they are in small pieces. For less-ripe berries, place them in a food processor (I do not know if you can use a potato masher) with a chopping blade and pulse a few times until they are in small pieces. Some can be larger then others-just make sure the mixture is not to soupy.

2. Toss the berry pieces and  the sugar together in the saucepan.  Let stand for 20 minutes. Press a spoon into the berry liquid and remove 1 tablespoon of the liquid. Put in the small (Or use the measuring cup). Using the fork or small whisk, mix the cornstarch into the tablespoon of berry liquid until there are no lumps. Add the mixture back to the berries.

3.Bring the berries to a boil. Stir occasionally and continue to boil mixture for about 15 minutes, or until the jam is thick (the mixture will continue to thicken a little bit, later, when you have put it in the refrigerator).

4. When the jam is cool enough to handle,spoon the mixture into the container, cover, and refrigerate. When the mixture is cold, add the lemon juice to taste and mix.

The strawberry jam is really good!

Me and my mom read
 a Psalms together then each day we write about one of the verses. Then after I am done I post it on my blog.

This is what I wrote about Psalms 4:

   Day 1 I like the book of Psalms because every chapter is a song and I like to sing the Psalms.
 So lets get back to Psalms 4. I think Psalms 4:1 means that the Lord answers and hears your prayers; and God has kept you safe.

 Day 2 Like I said before I love the book of Psalms. I think Psalms 4:2 is telling you  to love God and try not to sin.

Day 3 I think Psalms 4:3 means that the Lord heres are prayers and to not sin.

Day 4 I think Psalms 4:4 means to not sin.

Day 5 I think Psalms 4:5 is telling you to trust the Lord.

Day 6 I think Psalms 4:6 means that the Lord will take care of you.

Day 7   I think Psalms 4:7 means that God has put joy in your heart.

Day 8 I think Psalms 4:8 means that the Lord will keep you safe.
